Coffee Cake Recipe using TIANA Organic Coconut Flour
- Two cups’ nuts, chopped.
- ½ cup TIANA raw coconut nectar, pure sugar alternative
- One teaspoon ground cinnamon
- ¼ cup butter, melted
- Mix all ingredients together
- and set aside while you make batter.
- ¾ cup sifted TIANA coconut baking flour
- ¼ cup coconut milk, made from TIANA raw coconut goodness
- ½ cup TIANA coconut butter, melted
- Nine eggs
- ½ cup sugar
- ¾ teaspoon salt
- ¾ teaspoon vanilla
- ¾ teaspoon baking powder (gluten free)
Mix butter, eggs, sugar, coconut milk, salt, and vanilla. Combine coconut flour with baking powder and whisk into batter until there are no lumps. Pour batter into greased 28x18x5cm. Sprinkle topping evenly over batter. Bake at 175°C for 35 minutes or until knife inserted into centre comes out clean.
Carrot Muffin Recipe with TIANA Organic Coconut Flour
- ¼ cup sifted TIANA organic coconut baking flour
- Three eggs
- Two tablespoons TIANA coconut butter, melted.
- Three tablespoons TIANA honey
- ¼ teaspoon salt
- ¼ teaspoon vanilla
- ¼ teaspoon baking powder
- ½ cup shredded carrot
- ¼ cup pecans or walnuts, chopped
- ¼ cup raisins
Blend together eggs, butter, honey salt and vanilla. Combine coconut flour with baking powder and whisk into batter until there are no lumps.
Fold in carrots, nuts, and raisins. Fill greased muffin cups with batter. Bake at 205°C for 16 minutes.
