CLASSIC RATATOUILLE

Ingredients
2 large onions, chopped
• 2 cloves garlic, minced
• 2 large or 3 medium peppers, seeded and cut into stripes (green, red and/or yellow peppers)
• 1 sliced courgette (500g)
• 1 diced aubergine (500g)
• 4 large ripe tomatoes, skinned and wedged
• 3 tablespoons chopped parsley
• ½ teaspoon organo
• ¼ teaspoon black pepper 

Method
1. Warm TIANA® odourless butter in a large pan.
2. Sauté onions and garlic until tender.
3. Add the remaining ingredients, and bring to a boil. 
4. Reduce heat, cover, and let simmer until vegetables are tender, about 30 to 40 minutes.
5. Pour in a large plate or in individual ramekins.
6. Decorate with  few parsley leaves.
