BLUEBERRY COCONUT MUFFINS

Ingredients
• ¼ teaspoon salt
• ¼ teaspoon vanilla
• ¼ teaspoon gluten free baking powder
• ½ cup fresh blueberries

Method
1. Blend together eggs, TIANA® Odourless Cooking Butter, TIANA® Raw Honey, salt and vanilla.
(Use TIANA® Coconut Oil instead of TIANA® Butter for an extra delicate flavour of coconut).
2. Combine TIANA® Coconut Flour with baking powder and thoroughly mix into batter until there are no lumps.
3. Fold blueberries into batter. Blueberries should be dry. If rinsed, dry them off before adding to batter.
4. Pour batter into greased muffin cups.
5. Bake at 205°C (400°F) for 16-18 minutes.
