Ingredients
• ¼ cup sifted TIANA® Fairtrade Organics Gluten-Free Coconut Baking Flour
• 3 tablespoons TIANA® Fairtrade Organics Extra Virgin Coconut Oil or TIANA® Fairtrade Organics Odourless Virgin Cooking Butter, melted
• 3 tablespoons TIANA® Fairtrade Organics Raw Active Wild Flower Honey 10+
• 3 eggs
• 3 tablespoons TIANA® Fairtrade Organics Raw Active Wild Flower Honey 10+
• 3 eggs
• ¼ teaspoon salt
• ¼ teaspoon vanilla
• ¼ teaspoon gluten free baking powder
• ½ cup fresh blueberries
Method
(Use TIANA® Coconut Oil instead of TIANA® Butter for an extra delicate flavour of coconut).
2. Combine TIANA® Coconut Flour with baking powder and thoroughly mix into batter until there are no lumps.
3. Fold blueberries into batter. Blueberries should be dry. If rinsed, dry them off before adding to batter.

4. Pour batter into greased muffin cups.
5. Bake at 205°C (400°F) for 16-18 minutes.
